Kalimoxto Popsicles // The Shared Sip

Have you ever had a Kalimotxo? If you’ve been to Spain, chances are you have—but if not, it’s unlikely. Known as “poor man’s sangria”, a Kalimotxo (pronounced cal-ee-mo-cho) is a seemingly strange blend of red wine and cola, with just a bit of citrus added. But the result is surprisingly tasty, a perfect summer sip. I love complex cocktails but sometimes you just want something refreshing and unfussy. A Kalimotxo is just the ticket!

Every year, the inimitable Billy of Wit & Vinegar hosts a virtual Popsicle Week, in which you’ll see social media overcome with the most incredible and delicious popsicle creations. Some are sweet, some are tart and maaaaany are of the boozy variety. It’s the perfect way to kick of summer and get inspired to make some tasty seasonal treats. I adapted the traditional Kalimotxo recipe into popsicle form, and added a touch of lemon and lime. They end up being a little slushy which I actually loved—it’s almost like shave ice on a pop! They melt quick but you’ll consume them even faster, I promise.

Kalimotxo Popsicles
makes 10 popsicles

  • half bottle red wine (I used a Malbec but any not-too-complex wine will work)
  • 2  12-oz bottles cola (I used Mexican Coca Cola)
  • 1 lime, cut into 10 wedges
  • 1 lemon, cut into 10 wedges

Assembly
Fill each popsicle mold with half red wine and half cola. Juice one wedge of lemon and one wedge of lime into each mold. Since popsicle sticks will float because of the carbonation, add them about 2 hours into freezing, when they are starting to set. Freeze until completely solid. Gently remove from mold, spritz with an optional lime wedge, and enjoy (quickly!)
